The coffee is harvested by hand during the peak season from April to September, ensuring only the ripest cherries are selected. After the harvest, the beans undergo dry (natural) processing, where they are allowed to sun-dry in the open air. Through this process, farmers also ensure that the coffee is Fairtrade certified, meaning they receive a fair price for their hard work, fostering sustainable and ethical farming practices.
